- Caraway or Persian
cumin (Carum carvi) is a biennial plant in the family Apiaceae, native
to Europe and western Asia. The plant is similar in appearance to a
carrot plant, with finely divided, feathery leaves with thread-like
divisions, growing on 20–30 cm stems. The main flower stem is 40–60 cm
tall, with small white or pink flowers in umbels. Caraway fruits,
(erroneously called seeds) are crescent-shaped achenes, around 2 mm
long, with five pale ridges.
- Caraway had been used
since the ancient times to calm the digestive tract and expel gas.
Caraway seeds have been found in prehistoric food remains from 3500 B.C.
The ancient Greek physician Dioscorides mentioned the seeds to aid
digestion, and herbals down through the ages have recommended them for
indigestion, gas, and infant colic.
- Caraway grows best in
well-tilled, moderately light clay soil that is rich in humus. Tolerated
pH range is 4.8 to 7.8. Caraway needs full sunlight and requires
additional watering during dry spells.
- Caraway fruits may
contain 3% to 7% essential oil. The aroma of the oil is mostly dominated
by carvone (50 to 85%) and limonene (20 to 30%); the other components
carveol, dihydrocarveol, a- and ß-pinene, sabinene and perillyl alcohol
are of much minor importance. Caraway is of some importance in the
cuisines of North Africa, mostly in Tunisia.
- Caraway seeds can hold
their flavour for months stored in airtight containers and kept away
from light. It is suggested to add seeds after a dish is cooked, as a
long simmer may turn the flavour bitter. It has a sweet warm aroma with
a flavour similar to aniseed and fennel. It figures prominently in the
cuisines of Germany, Austria, eastern Europe and Scandinavia. It seems
to have a special affinity for apples, pork and sausages.
- The primary medical
benefit of caraway is its effect on digestion. It is a carminative which
means it helps with gas and digestion. It is helpful to chew caraway
seeds after a heavy meal. It has been used for colic as it is a light
sedative and it can be used to settle a queasy stomach
(antispasmodic).
- Afghan black cumin
grows in the wild in various parts of Afghanistan, in Badakhshan in
particular. It is often referred to as caraway52. About 1,600 MT were
exported in 2003, to Pakistan and India mostly, accounting for about US
$ 7 Mn.Afghanistan is a major player in the global cumin and caraway
trade: Afghan products accounted for about 15% of the world exchanges of
cumin and caraway in 2003.
- Indian cumin is
exported in its natural as well as powdered forms, besides as essential
oils. exports are mostly to USA, Singapore, Japan, UK, and middle east
countries. The world demand for cumin is in the range of 12,000-15,000
tonnes. Singapore, USA, UK. Netherlands etc. are the important markets
for cumin. India's export of cumin is mainly to countries like UK,
Singapore, Saudi Arabia and Japan.
- The interest in caraway
and other herb-like crops has been increasing as well. The cultivation
area of caraway was the highest ever in the year 2003, consisting of
about 7,000 hectares. These crops are used mainly for food production
but there are many research projects surveying also the non-food
applications.
