  • Casein is a protein that is found in milk and used independently in many foods as a binding agent. Technically, it is part of a group called phosphoproteins, collections of proteins bound to something containing phosphoric acid. Casein may also be called caseinogen, particularly in European foods.
  • Casein is a salt, meaning it has no net ionic charge, of the element calcium. It has a number of interesting properties that make it useful in foods and cooking. Casein can be found in two main types: edible and technical. Edible casein is widely used in both medicine and food, both for nutritional value and as a binder. Technical casein is used in an enormous range of products, including paints, cosmetics, and many types of adhesives.
  • Casein is the major protein in cow's milk and constitutes about 80% of the total protein content of which the rest, the 9 per cent SNF portion of milk contains around 3.5 per cent proteins and 4.5 per cent lactose (milk sugar), with assorted vitamins, minerals and enzymes making up the rest.
  • Casein is the basic component of ordinary cheese. In the cheesemaking process, casein is precipitated by the action of rennet enzyme, and a coagulam is formed consisting of casein, whey proteins, fat, lactose and the minerals of the milk.
  • Casein can be produced for different applications by precipitation from the skimmed milk with dilute Sulphuric acid, Hydrochloric acid or Lactic acid. Casein is produced in various grades which includes hydrochloric acid casein, sulphuric acid casein, lactic acid casein, rennet casein, fat free casein.
  • Commercially, casein is isolated from milk through the action of lactic acid-producing bacteria or through the addition of an acid such as HCl. The use of CO2 to precipitate casein from milk has recently been demonstrated on a batch scale and for a continuous pilot plant process.
  • Casein exists in milk in complex groups of molecules (sometimes referred to as calcium phospho-caseinate) that are called micelles. The micelles consist of casein molecules, calcium, inorganic phosphate and citrate ions, and have a typical molecular weight of several
    hundred million.
  • Ireland’s casein exports went to the US, which remains the key export market. However, Ireland’s dependence on the US has reduced, with this market accounting for 60% of exports in 2001, and intra-EU exports representing 38% of the total. There is concern regarding the ongoing viability of this US casein market.
  • The prices for casein are still rather low in spite of the reduction of its output. The asked prices of a few manufacturers fluctuated in the range of UAH28,000–29,000 per MT in the middle of January 2005. The rather small volumes of the products are exported for the prices in the range of USD5,100–5,300 per MT FCA. Taking into consideration the current situation on the world casein market it can be supposed that it is hopeless for the Ukrainian casein traders to wait the significant improvement of their position on the market.
  • By 2005, the value of Indian dairy produce is expected to be INR 1,000,000 million. In last six years foreign investment in this sector stood at INR 3600 million which is about one-forth of total investment made in this sector. Manufacture of casein and lactose, largely being imported presently, has good scope. Exports of milk products have been decanalised.
