- Culinary herbs are fresh
or dried leaves used as a food flavoring. Some of the more popular
commercially grown herbs include basil, cilantro, chives, dill, mint,
oregano, parsley, rosemary, sage, and thyme.
- Culinary herbs include
chives, cilantro, oregano, peppermint, rosemary, sage, spearmint, summer
savory, sweet basil, sweet marjoram, thyme and, to a lesser extent
arugula, borage, fennel, horseradish and tarragon.
- Culinary herbs are
different from spices. Generally, culinary herbs are fresh or dried
leaves while spices are seeds, roots, fruits, flowers, and bark.
Culinary herbs usually have a mild flavor while spices tend to have a
stronger, pungent flavor.
- The main requirements to
produce culinary herbs are the correct plant material, good
horticultural/arable soils, irrigation, good shelter, harvest equipment,
a drier and drying shed, secondary sorting and processing equipment or a
cool store if supplying the fresh market.
- Extraction methods
include: Steam Distillation , Hydro distillation , Solvent Extraction
Carbon Dioxide Extraction.
- Culinary herb production
can result in significant returns to the owner’s land, labor and
investment. Profitability, however, will be dependent on product
quality and market.
- Production of culinary
herbs for the fresh, frozen processed and dried market will likely
increase. The large growth in the production of fresh culinary herbs
provides opportunities to growers that either develop a market niche or
cooperate closely with a broker or specialist in marketing.
- Current consumer demand
for herbs and herb products is high, as is the interest in natural,
organically grown products.
- The world market for
imported spices and culinary herbs is large, valued at just over US$ 2.3
billion. The main importers are developed countries (EU, USA) which
import tropical and sub-tropical spices from developing
countries.
- Culinary herbs have many
medicinal uses. Medicinal herbs are widely used as diet supplements and
in the treatment of illness. For example, valerian root, echinacea root,
ginseng, peppermint, feverfew. Generally production is intensive and
requires small areas of land.
- Demand for fresh organic
herbs has recently increased, but without expensive heated greenhouses,
growers in our region (zone 5) have only been able to provide 4-5 months
of annual and perennial fresh cut herbs.
