- Banana, the fruit
of a plant of the genus Musa (family Musaceae) is basically
cultivated for food, and secondary for the production of fibers, and
also for producing tissue-thin tea bags.
- Bananas consist
mainly of sugars (glucose, fructose and sucrose) and fiber, which
makes them ideal for an immediate and slightly prolonged source of
energy.
- Banana fiber is
used in the production of banana paper. Banana paper is used in two
different senses: to refer to a paper made from the bark of the
banana plant, mainly used for artistic purposes, or paper made from
banana fiber, obtained with an industrialized process from the stem
and the non-usable fruits.
- Antifungal and
antibiotic principles are found in the peel and pulp of fully ripe
bananas. The antibiotic acts against Mycobacteria. A fungicide in
the peel and pulp of green fruits is active against a fungus disease
of tomato plants.
- Bananas for puree
production ideally should be harvested at the point of maturity. The
puree is used for beverage industry, baby foods, snack foods, jam
and sauces.
- Banana powder has a
great potential for commercialization. It has a high sugar and low
starch content and can be used as a substitute for fresh banana in
making traditional cakes or their premixes as well as in the
processing of banana snacks, crackers or crisps.
- Banana flour is
completely different from banana powder because it is the product
which is obtained after drying and then grinding of the unripe
banana.
- The popularity of
snack foods is growing high day by day and potato & banana wafers
have emerged as a potential snack food.
- The demand of
handmade paper is increasing day by day in domestic as well as in
international market. Several varieties of Banana are cultivated in
the country. The plants are cut down as soon as fruits are harvested
for extraction of fibre. Banana fibre has great potentialities for
paper making because of its high alpha-cellulose and low lignin
content
