juncea (L.) Czern. & Coss., Sinapis alba L.]
- Mustard is both a condiment and an oilseed crop
- The term 'mustard' is believed to be derived from the use of the
seeds as condiment; the sweet 'must' of old wine was mixed with
crushed seeds to form a paste.
- Within the condiment mustards all have high glucosinolate levels
and the oil is neither canola nor industrial quality. There is
Yellow Mustard (or white mustard), Sinapis alba, and Oriental
Mustard, Brassica juncea (yellow and brown seeded varieties)
developed between the cross Brassica rapa (canola-cabbage, kohlrabi,
etc.) X Brassica nigra (Black mustard-weed).
- India is one of the major countries producing mustard
- Mustard seeds are mainly used for the extraction of edible
oil.
- Mustard powder is used as a condiment in pickles, meat and salad
dressings
- Mustard seed can also be milled into mustard flour and used as
an ingredient in processed foods, such as salad dressings and soups.
- A technology for processing mustard into powder form has been
developed
and is being offered
- Scientists have developed yellow mustard varieties that have the
potential to significantly reduce the cost of the oil used in
biodiesel production
- Black mustard contains mucilage, fixed oil, volatile oil,
sinigrin. Actions: rubefacient, irritant, stimulant, diuretic,
emetic.
- In several epidemiology studies,
exposure to mustard gas (through military use or occupationally) was
associated with an increased risk of lung or other respiratory-tract
cancer.
- GM mustard is claimed to be resistant to glufosinate, a
broad-spectrum herbicide, and there is claims that the gene
modification will help increase mustard productivity by 20-25 per
cent.
