  • Rhubarb is a perennial plant that grows from thick short rhizomes, comprising the genus Rheum. The large, somewhat triangular leaf blades are elevated on long, fleshy petioles. The flowers are small, greenish-white, and borne in large compound leafy inflorescences. 
  • The technical name of the genus (Rheum) is said to be derived from Rha, the ancient name of the Volga, on whose banks the plants grow. There were those who called it Rha Ponticum, and others Rheum or Rha-barbarum. Others derive the name from the Greek rheo ('to flow'), in allusion to the purgative properties of the root. 
  • Rhubarb is an important traditional chinese herbal medicine widely used in traditional chinese medicine for thousands of years, and has recently been developed for the treatment of acute and emergency disease. Studies on the functions of rhubarb in modern medical research both in clinical and basic science settings have revealed that rhubarb has multiple effects including defervescence, antibacterial properties
  • The United Kingdom market for organic fruit and vegetables was valued at about UK£165 million in 1999  although it is likely that it was significantly higher than this at the end of 2000. Regardless of market size, fruit and vegetables are the largest sub-group within the total organic food sector, presently accounting for about 40 percent of the total United Kingdom organic food and drink market.
  • British Columbia has the largest proportion of land devoted to organic fruit and vegetable production. In British Columbia, 8.7% of total vegetable area and 3.2% of fruit area is organic, compared to just 1.5% of vegetable area and 1.6% of fruit in Ontario. Organic farms tend to be smaller than conventional operations, with the majority less than five acres. However, a trend toward larger organic farms has developed over the last four years.
  • A rhubarb crown can cost $2.50 to $6.00, depending on the variety, quantity purchased and supplier. The crown will begin contributing toward the cost of its purchase the year after it is planted. Producers with market outlets will capture nearly the entire selling price in returns to land, labor and management after the initial year of establishment. Well-managed rhubarb could easily return a gross profit of $8.00 to $20.00 per crown per year.
