Xanthan is still one of the fastest growing hydrocolloids. Its
versatility and, now its low price, make it a hydrocolloid of
choice.
In 1980, the EU approved xanthan gum under the E-number 415,
some eleven years after the FDA cleared the high molecular weight
polysaccharide as a food additive for the US market.

- Xanthan Gum is produced by fermentation of Xanthomonas
Campestris.
- Biogums (such as xanthan gum) used by the food industry as
low calorie fat replacers and stabilisers, and to provide
texture and viscosity to sauces and dressings. Biogums help
sauces to 'cling' to other foods such as vegetables and meat.
- Xanthan Gum is an odourless cream-coloured powder.
- Xanthan Gum dissolves in cold and hot water, the solutions
are very viscous, highly pseudoplastic and very resistant to pH-
variations, enzymatic degradation and temperature variations.
- Xanthan Gum disposes of excellent freeze / thaw stability
and is compatible with all commercial thickener and alcohol.
- Xanthan gum is used to provide viscosity, suspension and
emulsion stability of water based systems
