Xylitol is a naturally occurring
sugar alcohol that is found in many fruits and vegetables and is often
used as a sweetener in a variety of foods.

Xylitol when used by bacteria as
food decreases the bacteria’s ability to stick to tooth surfaces,
interfering with their ability to form large colonies thus reducing
their ability to form Dental Plaque.

It also reduces the acid
producing potential of the bacteria which is the leading cause of tooth
decay according to the Acid Theory of Dental Decay.

Xylitol is a glucuronic that is
a good nutriment and assisting cure for diabetes patients. It is made
from bagasse and extensively used in the fields of national defense,
chemical industry, foodstuffs and light industry, etc. The product has a
bright prospect in the international market.

Rice & cotton seed hulls,
bagasse, corn stalks, coconut shells etc. with rich xylan contents can
also be used for production of xylitol.

Xylitol has been used in a wide
range of products. It can be used as an additive in food industry, in
pharmaceutical industry, health food, beverage industry, cakes, gums as
sweetener and in light industry as raw material.

Xylitol can be produced from D-xylose
by Candida tropicalis under high air flow rate conditions. The high air
flow rate (1.5 vvm) reduced the ethanol content of the
fermentation broth and therefore improved the yield of xylitol.
