- A turkey is either
of two species of large birds in the genus Meleagris native to North
America . Males called gobblers or toms are larger than females called
hens.
- Turkey mainly lives
in forested areas and marshlands, and it is native to northern Mexico
and the eastern United States.
- The three main types
of turkey production consist of conventional enclosed housing (Broiler
sheds), pole barns and free range systems.
- Feed is a
significant expense. Heritage turkeys require
a feed formulation with
28% protein, which is more expensive than commercial turkey
feed.
- The turkey
processing plant
studied is a vertically integrated, federally
inspected operation. Separate rooms are used for the various stages of
processing, including killing, scalding and plucking, eviscerating,
chilling, and packaging.
- The current trend
for the industry is increased size of each production unit, and
increased specialization. In the past, a large percentage of the
producers maintained a breeder flock, hatchery, and grow-out
units.
- Turkey production in
the United States for was 296 million. The number one production state
was North Carolina with production of 63 million and Minnesota was
second with production of 41.0 million.
- Turkeys are marketed
between 14 and 16 weeks of age. At this age turkey will typically weigh
from 14.7 to 17.5 pounds.
Two hundred million turkeys a year, or 3.7
billion pounds at about 80 cents a pound, are sold to the American
people, each of whom consumes an average of 13 1/2 pounds a
year.
- For years the turkey
industry was a whole-bird market, and that still is a big part of the
business.
- The economics of
range production of heritage turkeys is dependent on fixed costs,
management, product quality, and market conditions.
- Turkey farming is
very popular in western countries and the major turkey producing
countries are United States of America, Canada, Germany, France, Italy,
Netherlands and the United Kingdom.
- Turkey farming is in
infancy in India. Turkey farming is getting popular fast in southern
regions. There are three varieties of turkey commonly available in
India. They are Board breasted bronze, Broad breasted white and
Beltsville small white.
- The meat of turkey
has nutritional and sensorial properties which make it almost ideal raw
material for rational and curative nutrition.
- The turkey is reared
throughout temperate parts of the world, and is a popular form of
poultry, partially because industrialised farming has made it very cheap
for the amount of meat it produces.
