  • Lecithin is mostly a mixture of glycolipids, triglycerides, and phospholipids.In biochemistry, lecithin is usually used as a synonym for pure phosphatidylcholine, a phospholipid which is the major component of a phosphatide fraction which may be isolated from either egg yolk or soy beans from which it is mechanically or chemically extracted using hexane.
  • Lecithin is regarded as a well tolerated and non-toxic surfactant. Lecithin is an integral part of cell membranes, and can be totally metabolized, so it is virtually non-toxic to humans. Other emulsifiers can only be excreted via the kidneys.
  • The lecithin is obtained by degumming the extracted oil of oil seeds. The lecithin is a mixture of various phospholipids, and the compositions depends on the origin of the lecithin. A major source of lecithin is soybean oil.
  • Phosphatidylcholine (Lecithin) may be useful in helping to restore liver function in a number of ailments including alcoholic fibrosis and possibly viral hepatitis. It has also been used in connection with some manic conditions. There is also some evidence that Phosphatidylcholine may be useful in the management of Alzheimer's disease and some other cognitive disorders including tardive dyskinesia.
  • Lecithin has a great diversity of applications from chocolate, margarine, instantized products, baked goods and baby food to food supplements. In close cooperation with a Brazilian oil mill group, Sternchemie has launched a new product Greencithin produced solely from pressed soybeans. A worldwide innovation in the 80-year history of lecithin.
  • Australia imports approximately 2500 tonnes of lecithin annually, the majority of which is used in the food industry. The global market for soy lecithin products is approximately 150,000 - 160,000 t/a; of this up to 120,000 t/a is a standard grade lecithin. This accounts for only 40% of the lecithin precursors .
  • Lecithin is imported from a variety of countries which can be divided into two categories: those regions which grow and process their own soybeans, such as the U.S and South America and those countries which process soybeans imported from the U.S or South America, such as Europe and Japan.
  • Australia imports mainly bleached lecithin which, depending on the current exchange rate, is equivalent to A$0.90 - $1.00 per kilogram on the spot market. However, the average actual imported price of lecithin from the North and South America is $2.07/kg and $1.00/kg respectively, and the average price from Europe and Japan is $3.47/kg.
  • To aid in evaluating the feasibility of producing lecithin in Australia, future work is aimed at performing a more detailed cost analysis into lecithin production, including the evaluation of alternate processing technologies. At present, the lecithin processing industries of India and Eastern Europe are being evaluated, due to their relevance to the Australian industry in terms of market size and type of lecithin processed.
