- The bulbs contain 0.06% to 0.1% of volatile oil whose active
constituents are propyl /-disulphide, alliin and allicin
- On crushing the bulbs oil bearing cells burst releasing

of disulphides which are responsible for characteristic odour Garlic
oil
- Flavour strength of Garlic oil is 200-900 times that of
dehydrated &
fresh Garlic respectively
- Garlic oil is a valuble flavouring agent in food and perfumery.
In addition, it has a pharmaceutical value as an antiseptic and
bactericide
- Steam distillation is the preferred method for garlic oils
produced in large quantities.
