- Garlic powder is
dried garlic that has been finely diced to create a powdered
form.
- Garlic powder has
a different taste from fresh garlic. If used as a substitute for
fresh garlic, 1/8 teaspoon of garlic powder is equivalent to one
clove of garlic.
- It is simply
dehydrated, pulverized garlic clove, the composition, specially
allinase activity is identical to those of fresh garlic.
- Garlic Powder,
which is used mainly as a condiment in food preparations, also
serves as carminative and gastric stimulant in many medical
preparations.
- As a condiment, it
is used for flavouring mayonnaise and tomato ketchup or sauces,
salad dressings, meat sausages, gravies, stews, spaghetti,
chutneys, pickles, curried dishes, etc.
- It aids in
digestion and absorption of food.
- It also possesses
anthelmintic and antiseptic properties and because of these
properties it is used in a number of medical preparations.
- Garlic powder is
used as a flavoring agent for condiments and food and is thought
to retain the same ingredients as raw garlic.
- The conventional
technique of making garlic powder consists in removing by hand
the outer papery skin of the garlic bulb, separation and peeling
of cloves manually, dehydrating and powdering them before
packing.
- Garlic powder is
produced by slicing or crushing garlic cloves, then drying and
grinding them into powder.
- South Korea is the
largest consumer of Garlic Spices, extensively used for
medicinal and culinary purpose.
- Garlic powder is a
very popular ingredient with cooks throughout the world, but is
especially popular in Chinese and Mediterranean cooking.
- Garlic powder as a
natural growth promoter can be a potential alternative for
common artificial growth promoters like antibiotics
and in this respect, it can improve performance and carcass
characteristics in broiler chickens.
- Garlic powder is a
hygienically-prepared good quality product. It is easy and
convenient to use and store and can be transported without any
difficulty.
- Garlic powder can
be produced in many states of India, but this note considers
Gujarat as a preferred location.
- Manufacturing and
marketing of garlic powder is a well established industry in
European countries and USA.
- Uses of garlic
powder, that it has made a prominent position in the food
processing industry.
- In most developing
nations, garlic was consumed as such and no efforts were made to
produce dehydrated garlic or garlic powder with a result that
nearly 20% of the crop was wasted due to respiration,
transpiration and micro-biological spoilage during ordinary
storage of garlic bulb.
