  • Beer is the world's oldest and most popular alcoholic beverage. It is produced by the fermentation of sugars derived from starch-based material. Worldwide, 20,000 brands of beer are brewed in 180 styles, from ales, lagers, pilsner and stouts to bitters, cream ales and iced beers. 
  • Brewing consists of the following steps, malting, Braceaje, Boiling / Lupulisation, Filtration, Fermentation, Maturing process and Pasteurization.
  • Brewing is the process of changing water and grain into beer through a yeast catalyst. The quality of the water is extremely important. Hard water produce a bitter ale, soft water produce bitter lager. Barley or hops, or a combination of them, is used for the grain. Getting dry grain ready for fermentation is called malting. The grain is steeped in water until it sprouts. The sprouting or germination is not allowed to end naturally but is interrupted either by drying or roasting in kilns.
  • Making beer is easy, inexpensive, and most of all, fun. With the rise in popularity of homebrewing, there are a wide variety of top quality ingredients available. Beer is made from 4 basic ingredients: water, malt (malted barley), hops, and yeast. Making Beer is just like cooking. Each recipe requires different ingredients and techniques. 
  • Process hygiene plays a major role in the production of high quality beer. Knowledge of microorganisms found in the brewery environment and the
    control of microbial fouling are both essential in the prevention of microbial spoilage of beer. Beer spoilage microorganisms, such as lactic acid and acetic acid bacteria, enterobacteria and yeasts were shown to produce biofilm on process surface materials in conditions resembling those of the brewing process. 
  • Wine bars could soon be dotting the lanes and by lanes of small towns in Maharashtra. The state government has permitted the setting up of exclusive wine bars - no other kinds of liquor will be allowed - for an annual license fee of Rs 5,000. However, the license fee for such wine bars in Mumbai will be higher, at Rs 37,500. The Rs. 5000 limit is applicable to all areas outside Mumbai, including Thane and Navi Mumbai. Industry sources said other states are also planning to follow Maharashtra's example.
  • Skewed excise policy across States along with varying trade margins will lead to disproportionate beer sales across the country this summer. Punjab, Haryana and Chandigarh are expected to fuel demand for beer due to changes in the beer selling policies whereby the auction system resulting in a monopolistic system has been removed. The demand for beer is expected to flatten in Maharashtra with the State Government's decision to hike the excise duty on beer in the State. The Beer consumption in Maharashtra is about 160 lakh (12-bottle) cases with Mumbai accounting for 40 per cent of beer sales in the State. 
  • The fragmented beer market is rapidly contracting. Recognizing that mature domestic markets lack room for adequate growth, breweries seek growth through acquisitions and mergers in high growth opening markets, such as China, and other markets in Asia and Latin America. Industrialized nations have a difficult time growing due to established markets and consolidation within their domestic sphere. International approaches that promote growth through consolidation abroad in fragmented markets allows for strategic international development of multi national breweries. 
  • To set up a beer plant with capacity of 10,000 bottles per day, one needs to invest about 3 crores in plant & machinery and another 0ne crore in working expenses
