- Spray-drying is
a unit operation by which a liquid product is atomized in a hot
gas current to instantaneously obtain a powder
- Spray drying
has three fundamental steps, atomization of the liquid feed,
mixing fine droplets with heated air stream to dry, and
separation of dried particles from air stream for collection
- The spray
drying process is considered a conventional method to convert
fruit juices to powder form. Process of spray-drying consists of
three basic steps, including atomization, droplet-hot air
contact and moisture evaporation, and separation of dry product
from the exit air. Spray drying of fruit juices involves the use
of drying aid which minimizes the stickiness problem during
drying operation.
- The ingredients
in pomegranate juice are invert sugars, citric acid, and a small
amount of malic acid, all of which have low glass transition
temperatures
- Due to this
characteristic, the particles stick to the dryer wall upon their
collision with it. In order to solve the stickiness problem,
maltodextrin DE12 and silicon dioxide were used as carriers to
reach a suitable drying condition.
- Different tests
were carried to study the effect of spray drying operating
conditions on the quality
attributes of spray-dried pomegranate juice powder. All the
responses were affected by the process
conditions
- Accoring to a
study by experts, The best operating conditions for spray drying
of pomegranate juice were 171°C inlet air temperature, 30 mL/min
feed flow rate, and 2,400 rpm blower speed.
