- Wheat starch consists of two types of
granules: the smaller spherical granules (1-10 micron) and the
larger lenticular granules (20-45 micron). The large starch granules
in wheat flour average about 10 % of the total granule number while
accounting for about 90 % of the starch granule weight.
- The world production of wheat starch
is about 2 million tons. Wheat starch is used in the baking
industry, in the production of adhesives and for conversion into
starch sugars.
- Starch gelatinization is a process of
breaking down the intermolecular bonds of starch molecules in the
presence of water and heat, allowing the hydrogen bonding sites (the
hydroxyl hydrogen and oxygen) to engage more water. This
irreversibly dissolves the starch granule in water. Water acts as a
plasticizer. Three main processes happen to the starch granule:
granule swelling, crystal or double helical melting, and amylose
leaching.
- Pregelatinized starch is starch which
has been cooked and then dried in the starch factory on a drum dryer
or in an extruder making the starch cold-water-soluble. Spray dryers
are used to obtain dry starch sugars and low viscous pregelatinized
starch powder.
- Amongst the different methods
available for production of
pre-gel starch, drum drying is the most economical and the easiest
method available compared to the other methods
- The drum dryer is heated on the inside
and turns continuously. In a full-continuous process, the product is
applied in a thin film on the outside of the drum and begins to dry
immediately. After one rotation, a knife scrapes the dried product
off the
drum surface as a film or as flakes.
- Pre-gelatinized wheat starches are
ideal for applications in which delicate texture, flavour and light
color are important
- Pregelatinized or “pregel”
starches are cold-water soluble starches
- “Pregel” starches are mainly used in
the manufacture of feed for pets and as milk replacers for calves.
- Pre-gelatinized wheat starch can be
used as a thickening agent in instant food products to eliminate
heating stage in their production or in manufacturing of the
products sensitive to high temperature.
- Pregelatinized starch act as an
excipients in food and pharmaceutical industry. Pregelatinized
starch absorbs water quickly which helps in easy digestion therefore
it is used as disintegrant.
